Harvest

Hand harvesting into crates also became a priority for the estate, with the grapes being transported directly from the vineyard to the press by conveyor belt without any handling. In this way the fruit remains intact until the time the grapes are pressed. The raisins are picked only when fully ripe which means that each parcel has to be regularly monitored.

The grapes are meticulously sorted both in the vineyards and then again on arrival at the press.

The red grapes are also rigorously sorted then completely destemmed in order to emphasise the fruit and intensify the aromas.
